Our speakers are experts and industry stars from around the world, bringing
fresh perspectives and a snapshot of trends, successes and strategies in the
global food industry. The Symposium is known for its agenda of compelling
international speakers. This year will be no different. To date, confirmed and invited speakers include:
Dr. David Hughes,
Emeritus Professor of Food Marketing,
Imperial College London (UK)
Back by popular demand for his fourth consecutive year as headliner for the Symposium, David will share his extensive knowledge, humorous insights and big
picture predictions of global food trends. David's impressive knowledge of the food industry, and his humorous insights, always deliver both an informative
and entertaining experience. Dr. David Hughes is Emeritus Professor of Food Marketing at Imperial College London, and Visiting Professor at the University
of Kent Business School and at the Royal Agricultural College, U.K. David has lived and worked in Europe, North America, the Caribbean, Africa and Southeast
Asia. He has extensive experience as an international advisory board member with food companies and organizations in three continents. Currently he is a
Non-Executive Director of KG Fruits and on the Advisory Board of Rabobank, UK.
Dr. Barry L. Zoumas,

Barry L. Zoumas is the Alan R. Warehime Professor of Agribusiness in the College of Agricultural Sciences at the Pennsylvania State University. He is also
a Professor of Food Science and Nutrition and is active in teaching, research and executive education. Dr. Zoumas has a background both as a
scientist and a businessman. In 1997 he retired as Vice President of Science and Technology from Hershey Foods Corporation where he was responsible for
Research and Development, Quality Assurance, Corporate Engineering, Environmental and Regulatory Affairs and Agribusiness. Prior to joining Penn
State's faculty, he spent 6 months as a visiting scientist at the Food and Agricultural Organization of the United Nations in Rome, Italy. Barry serves as
President of the North American Branch of the International Life Sciences Institute (ILSI North America), which plays an important catalytic role in
identifying and addressing scientific questions on nutrition, food safety, and consumer healthcare. Its programs bring together researchers from academia,
government, and industry to identify and resolve scientific issues for the benefit of the general public. Dr. Zoumas also serves on the Board of Directors
of Tate & Lyle, a world leader in renewable ingredient solutions whose ingredients are produced from renewable crops, predominantly corn (maize), wheat
and sugar.
Dr. Jacqueline Shan,
President, CEO & Chief Scientific Officer,
CV Technologies Inc. (Canada)
Dr. Shan combines Western and traditional Chinese medical knowledge, obtaining a Ph.D. in Physiology from the University of Alberta, a D.Sc. in Pharmacology
from the Peking Union Medical College, and is a Distinguished Visiting Investigator at the National Research Institute of Chinese Medicine in Taiwan.
She entered business by co-founding two biotechs, CV Technologies and HerbTech Inc. in 1992. Leading a team of researchers, she has since developed
ChemBioPrint, which ensures strong scientific research in the discovery process of new health-targeted nutraceuticals, and provides standardization for
natural health product development. She has discovered or co-discovered 10 patentable products including Cold-fX which made history for natural health
products by successfully completing a US FDA Phase II clinical trial showing a reduction of the incidence of Cold and Flu by 89%. Jacquie is the recipient
of many distinguished honors and awards in both science and business including the 2005 ASTech Award for Outstanding Achievement in Alberta Science and
Technology, Ernst & Young's Entrepreneur of the Year Award in Health Sciences, Alberta Venture magazine's 2006 list of Alberta's 50 Most Influential People
and nominee for Canada's Outstanding CEO of the Year for 2006. We are extremely pleased to welcome this internationally recognized speaker in
nutraceutical and natural health product research and development to the International Food Symposium.
Kaori Nakajima,

In addition to her work in the field of functional foods and dietary supplements, Kaori is a seasoned participant and speaker at food conferences
around the world from Bangkok, to Amsterdam to Rio de Janeiro - presenting the Japanese perspective on functional foods, food claims and regulations. Kaori
joined the Nisshin OilliO Group, Ltd., a leading oils and meals manufacturing and sales company in July 2006. She is currently Assistant Manager of the
Regulatory and Scientific Affairs Division, where she oversees the regulatory and scientific arena concerning "functional oils and foods" in Japan and around
the world. She also works with the division of environmental initiatives. Kaori worked for many years with the Japan Health Food & Nutrition Food
Association overseeing scientific and regulatory affairs and dietary supplement standards.
She is currently an Executive Committee member of the International Alliance of Dietary/Food Supplement Associations.
Dr. Peter Jones,

Richardson Centre for Functional Foods and Nutraceuticals (Canada)
Dr. Peter Jones, a pioneer in developing foods that can combat high cholesterol and other life-threatening conditions started as Director of the Richardson
Centre for Functional Foods and Nutraceuticals (RCFFN) on November 1, 2005. Peter was also recently appointed the Canada Research Chair in Nutrition and
Functional Foods, whose primary role is to fight obesity, heart disease and cancer by developing new, healthier versions of common foods. Dr. Jones was
formerly director of the Mary Emily Clinical Nutrition Research Center in the School of Dietetics and Human Nutrition at McGill University. Currently,
Dr. Jones serves as President of the Danone Institute for Nutrition in Canada and immediate Past-President of the Canadian Society for Nutritional
Sciences. He serves as Chairman of the Functional Foods and Nutraceuticals Board of the Vancouver-based Forbes Medi-tech group. Dr Jones has also sat on
the FAO/WHO/UNU Expert Consultant Panel for Energy and Protein Requirements in Human Nutrition. He has served on national grant review committees including
Canadian Institutes of Health Research and Heart and Stroke as well as on Editorial Boards for journals including the American Journal of Clinical Nutrition
and Nutrition Reviews. Dr. Jones has 180 peer reviewed papers to his credit.
Dr. Steven Pratt,

Steven G. Pratt, MD., F.A.C.S. is a Board Certified Ophthalmologist and a Fellow of the American College of Surgeons. He is a recognized world authority on
the prevention of eye disease. Dr. Pratt lectures nationally and internationally on the benefits of a diet based on the synergy of consuming whole foods and
adopting healthy lifestyle choices as a means to prevent all major chronic diseases. He is the author of two New York Times bestsellers: "SUPERFOODS Rx: Fourteen
Foods That Will Change Your Life" and "Superfoods HealthStyle: Proven Strategies for Lifelong Health". Dr. Pratt has appeared on "Today," "Oprah", CNN and "The View".
As a result, Dr. Pratt is regarded by the medical community and the general public as the pre-eminent voice for cutting edge nutrition and health.
Dr. Pratt currently serves as a Senior Staff Ophthalmologist at Scripps Memorial Hospital, and helped create the Ophthalmic Plastic Surgery
Department at the University of California, San Diego and remains on the Medical School's staff as an Assistant Clinical Professor. He has been voted "One of San
Diego's Top Doctors" by his San Diego peers. A resident of Southern California, Steven's four children have been raised in a lifestyle dedicated to health and
well-being. His deep faith in the power of nature has also contributed to his interests in organic gardening and wildlife conservation.
Dr. Dave Sparling,

David Sparling is Executive Director of the Institute for Agri-Food Policy Innovation in Guelph and an Associate Professor at University of Guelph. He farmed
for twenty years near Cambridge and has been president of an agri-business insurance company and a biotechnology start-up. He is a Senior Associate at the
University of Melbourne, teaching in the electronic Master of Agribusiness program. David has taught at the Australian Graduate School of Management in Sydney
and in the Faculties of Business at McMaster and Wilfrid Laurier Universities. His research interests are in the areas of agri-food policy, innovation and
commercializing new technologies.
Carol Binder,
Executive Director,
Pike Place Market
Seattle, Washington (USA)
A Pacific Northwest native, Carol Binder is the Executive Director of the Pike Place Market, America's oldest farmer's market. Carol has witnessed firsthand the
growing trend towards wholesome foods and local food sources; movements exemplified in the Market's Meet the Producer program which has been a part of the tradition
and character of Pike Place since 1907. She continues to work to support the large community of farmers who play an intrinsic role in making the Pike Place Market
the destination spot for nearly 10 million visitors each year.
Before her position as Executive Director, Carol acted as a strategic consultant to many of Seattle's nonprofit organizations, government agencies and small
businesses. She specialized in new business development, management, financial analysis, and board development. Carol is also a board member of the Market
Foundation and the Solomon Park Research Institute, a nonprofit organization specializing in neurobiological research. She has a degree in Accounting from the
University of Oregon and a Certificate in Nonprofit Management from the University of Washington.
Dr. Michael Heasman,

Dr Michael Heasman is the founder and editor of Food for Good, the independent business newsletter committed to researching, analyzing, and reporting on the
companies and issues making a difference to the business of food. Michael will share his insights on the global politics of food and health. As well as being
an entrepreneurial publisher and editor, Michael is a researcher, writer, and opinion leader on the global food industry and food policy and is an
international expert on food and health - from business strategy to public policy. Michael is the co-author (with Professor Tim Lang) of Food Wars: The
Global Battle for Mouths, Minds and Markets (2004) and the co-author of The Functional Foods Revolution: Healthy People, Healthy Profits? (2001) - both
leading texts in their field. He is also co-author of Consumption in the Age of Affluence: the World of Food (1996). As a business journalist he has helped
create and edit three previous food business newsletters. He was also director of studies and co-founder of the Centre for Food & Health Studies Ltd
(1999-2002), a London-based company specializing in healthy eating that publishes New Nutrition Business.
